IRISH RECIPES
St. Patrick's Day feast means Irish-American dishes, such as Corned beef and cabbage, green beer, and Guinness-infused desserts as there are more people from Irish descent in the USA than native Irish people in Ireland.
However, I decided to give you an Irish taste and I did some research and came up with these delicious typical dishes from Ireland. Colcannon is a side dish made of mashed ´potatoes and cabbage. Boxty is a potato pancake.

1- Tip the potatoes into a large saucepan of water. Bring to the boil, then simmer for 15-20 mins, or until the flesh is tender when pierced.
2- Meanwhile, heat quarter of the butter in a saucepan, then fry the bacon and half the cabbage for 5 mins. Turn off the heat and set aside. Drain potatoes in a colander and peel while still hot.
3 - Mash potato until smooth. Heat cream with remaining butter and, when almost boiling, beat into the potato. Add bacon and cabbage to potato and mix. Season if you want.

METHOD:


1 - Toss grated potatoes with flour in a large bowl. Stir in mashed potatoes until combined.
2- Whisk egg and milk together in a separate bowl; mix into the potatoes. Season to taste with salt and pepper.
3- Heat oil in a large skillet over medium-high heat. Drop in potato mixture, forming patties about 2 inches in diameter. Fry on both sides until golden brown, 3 to 4 minutes per side. Drain on a paper towel-lined plate. Serve warm.
